Competition BBQ is a cook-off event where teams compete with just one goal in mind – to make the best BBQ in the world. At least according to the judges. And everyone is looking for competition BBQ tips to give them the edge they need to win.

1. Start with good quality meat.

2. Buy the best quality smoker that you can afford.

3. Set up your grill or smoker properly for indirect heat.

4. Be sure the firebox has sufficient ventilation. This will keep your fire burning at the right level without smoldering.

5. Every smoker has different temperature spots. Use a thermometer to check the temperature at various locations and put your meat where it will cook the best according to the type and cut.

6. Keep the lid shut. A consistent temperature is the key to great BBQ, and opening the lid just lets all the heat escape.

7. Use a water pan to help control the heat in the smoking chamber and preserve a moist atmosphere. Add some beer for a little extra zest.

8. Make sure your meat is at room temperature before you throw it in the smoker. But don’t let it sit out at room temperature too long to avoid the risk of contamination from bacteria.

9. Avoid poking your meat. You don’t want to let the juices escape, which leads to dried out meat. Remember to let the meat rest after cooking and before pulling or cutting it.

10. Allow lots of time for your meat to cook. If it’s finished before the judging starts, wrap it in foil and put it in an empty cooler. Not only will it stay hot, it will actually continue to cook there.
